Breakfast Skillet for a Campfire

1/2 onion, chopped
6 eggs, beaten
4 cups potatoes, peeled and cubed
1 cup sliced bacon
1 cup shredded Cheddar cheese


What you'll require:

Cook the bacon to desired doneness in a cast iron pan over slow-burning campfire coals. Turn off the heat and set the pan aside. Add the onion and potatoes to the skillet and simmer for 10-12 minutes, or until potatoes are tender, in the heated bacon grease.

Add the eggs to the skillet with the bacon. Cook, covered, for 2-3 minutes, or until the eggs are set. Before slicing and serving, top with cheese and allow it to melt.

Breakfast Burritos with a Twist

12 eggs
1 small can green chilis
2 cups shredded Cheddar cheese
1 cup frozen hash browns
1 cup cooked ham, diced
1/4 cup chopped cilantro
1 tablespoon taco seasoning
1/2 tablespoon olive oil
8 pieces 12-inch flour tortillas


What you'll require:


Heat the olive oil in a big skillet and sauté the hash browns and ham for 8-10 minutes, or until cooked through, tossing regularly. In a large mixing bowl, whisk the eggs as you wait for it to cook. Stir in the taco spice until everything is well combined. Cook until the eggs are set in the prepared hash browns and ham. Combine the chilis, Cheddar cheese, and cilantro in a mixing bowl.


Fill each tortilla with 1/8 of the egg mixture and roll it up like a burrito. Wrap tightly in foil and place in Ziploc bags until ready to use. Warm over campfire coals until well heated when ready (the time will depend on how hot your fire is).


Allow it cool for a few minutes before serving after opening the foil.
